Coal is a restaurant built around one idea: that the oldest way to cook is still the best. Meat, fish, vegetables, bread. Nearly everything we serve meets the coals.
Fire asks for patience. Coals are lit hours before service, raked and read, fed and left alone. Fire rewards attention and punishes the lack of it. We think that attention is the whole point.
The first Coal is being built at Tollgate in Bramber, on the old road through the South Downs, an hour from London. Sussex has extraordinary produce, and until now nowhere quite like this to cook it.
